Ingredients For cream of chicken & rice soup

1 clong grain white rice

2 box(32 oz. each) chicken stock or 2 quarts homemade

1/8 tspcayenne pepper

1/4 tspnutmeg
-
salt & pepper to taste

1 cheavy whipping cream

2 ccooked, diced chicken
How To Make cream of chicken & rice soup

1Rinse the rice, then drain and add it to boiling water. Boil for 5 minutes then drain.

2Boil the chicken stock and add the rice. Lower the heat to simmering and simmer, covered for 25 minutes.

3Season with salt, pepper, cayenne, and nutmeg, then add the cream and bring to a simmer for 5 minutes longer.

4Stir in the cooked, diced chicken and serve immediately.

5NOTE: It will begin to thicken within a minute of leaving the heat.
