Ingredients For chinese hot and sour soup

    chicken stock
  • 2 oz
    dried vermicelli noodles broken into pieces
  • 4 oz
    shiitake mushrooms sliced
  • 7 oz
    chicken breasts cut into small pieces
  • 1 Tbsp
    fresh ginger peeled and grated
  • 2 Tbsp
    ketchup
  • 4 clove
    garlic minced
  • 3 Tbsp
    rice vinegar
  • 2 Tbsp
    soy sauce
  • 2 Tbsp
    sugar
  • 2
    red chili pepper seeded and thinly sliced
  • 1 tsp
    white pepper
  • 3
    green onions chopped. white and dark green parts separate
  • 1/2 c
    fresh cilantro minced

How To Make chinese hot and sour soup

    Heat the stock in large pan. Add the chicken, mushrooms, and noodles. Simmer until noodles are tender. Add the ginger, garlic, soy sauce, sugar, ketchup, vinegar, chilies, white pepper and the green parts of scallions.

    Cook tasting and adjusting for flavor. Garnish with green parts of scallion and cilantro.
