Ingredients For easy chicken tortilla soup

  • 2 Tbsp
    olive oil
  • 1 sm
    onion
  • 2 Tbsp
    garlic, minced
  • 1 can
    green chilies, chopped (7 oz.)
  • 2 can
    tomatoes, diced (14.5 oz.)
  • 1 can
    black beans, drained and rinsed (15.5 oz)
  • 2 c
    corn kernels, frozen
  • 8 c
    chicken broth
  • 1 pkg
    taco seasoning mix
  • 2 Tbsp
    cumin
  • 4 lg
    chicken breasts, boneless and skinless
  • 2 Tbsp
    lime juice
  • 1 c
    cilantro, fresh, chopped
  • GARNISH WITH:
  • tortilla strips
  • sour cream
  • avocado, sliced
  • cheddar cheese, shredded
  • OPTIONAL, IF DESIRED:
  • sliced jalapeños
  • crushed red pepper
  • hot chili pepper sauce, such as sriracha or tabasco

How To Make easy chicken tortilla soup

    In a large soup pot heat the olive oil. Add the onions and cook for 2 minutes. Once the onions have softened, add the garlic and cook for 1 minute.

    Add the green chilies, tomatoes, beans, corn, and broth to the pot and bring to a boil; lower heat to simmer and add taco seasoning, cumin, and chicken breasts. Cook the chicken for 20 to 25 minutes.

    Once chicken is tender, remove from pot and set aside to cool. When cool enough to handle, shred the chicken and place back into pot. Add lime juice and fresh cilantro.

    Ladle into soup bowls. Garnish with tortilla strips, sour cream, sliced avocadoes, and/or shredded cheddar cheese.

    Optional: May add heat to preferred individual taste. I use sliced jalapeños, crushed red pepper, or a favorite hot chili pepper sauce, such as Sriracha or Tabasco.
