Whenever we were sick Grandma P.'s soup came to the rescue. She taught me how to make homemade noodles at visits to her home when I was young. Store bought noodles just don't compare. This soup is comforting, hearty and delicious!

How To Make chicken soup with homemade egg noodles

  • 1
Wash chicken then put chicken, broth, cold water, carrots, celery, onion, rice and seasonings in a big pot on stove and heat on high until boils.
  • 2
Stir to mix then turn down to low-medium heat and cook for 20-25 minutes until chicken and veggies are cooked. While chicken is cooking make the noodles (recipe below).
  • 3
Remove chicken when done, cool, shred chicken into small pieces and put back into soup.
  • 4
For noodles--In a small bowl add the flour and make a well in the center.Add to the center the egg, olive oil, water and herb seasoning.
  • 5
With your fingers pinch pinch pinch until the flour is mixed in and it pulls away from the bowl. (you may use a fork if you don't want to use your fingers)
  • 6
You should have a ball of dough the size of a large tennis ball. On counter top knead this dough for about 2 minutes until it is smooth and round.Cover with the bowl and let rest for 15-20 minutes.
  • 7
Now take a little flour and sprinkle it on counter top and roll out the dough until it is thin. You should almost see through it. Sprinkle with a little flour again.
  • 8
Fold the dough 3-4 times and then with a pizza cutter on a cutting board, cut the folded dough into strips. These can vary in thickness whatever you prefer.Unroll noodle strips then cut into 2 inch pieces.
  • 9
Heat soup again and then add the noodle strips to the broth. The noodles are done when they float to the top of the broth.
  • 10
    Enjoy your soup!
