Ingredients For chicken in pasta broth with veggies

  • 3
    boneless skinless chicken thighs diced into small cubes
  • 2 Tbsp
    olive oil
  • 4 clove
    garlic minced
  • 1 md
    onion small diced
  • 1 c
    carrots julienned
  • 1 c
    cauliflower florets
  • 4 c
    chicken stock
  • 1/4 c
    fresh parsley chopped
  • 1 tsp
    fresh thyme leaves minced
  • 1 c
    acini di pepe pasta
  • salt and pepper to taste
  • fresh grated parmesan for serving

How To Make chicken in pasta broth with veggies

    In a large pot add oil. Add the chicken and brown on all sides. Saute the onion, garlic, carrot, and cauliflower and cook until lightly colored.

    Stir in the chicken stock, parsley and thyme and bring to a boil. Add the pasta and lower the heat and simmer 10 minutes.

    Taste and season with salt and pepper. Serve with shredded Parmesan cheese
