1 lgonion chopped

2 mdcarrots thinly sliced

1 bunchbaby broccoli trimmed.

3boneless skinless chicken thighs cut into small chunks

232 oz cartons of chicken stock

2 mdzucchini peeled and spiralized

1 cchopped fresh spinach
How To Make chicken and vegetable zoodle soup

1In 5 qt. Dutch oven add the oil over medium high heat. Add the onion, carrots, broccoli, thyme salt and pepper. Cook for about 5 minutes. Add the garlic and cook 30 more seconds. Stir in the chicken stock and the chicken. Bring to a boil. Reduce to a simmer and simmer 10 minutes. Add the zucchini noodles and the spinach. Cook 2 more minutes. Taste and adjust seasonings.
