Ingredients For chicken and dumpling soup

1 lgfatty chicken

carrots - large chunks
-
water
-
seasoning
-
potatoes - large chunks
-
celery salt
- DUMPLINGS:

3 lgeggs

1 tspsalt
-
1 cwater
-
1 tspbutter
-
flour
- RICE:
-
2 cwater
-
1/2 crice
-
1/2 tspsalt
How To Make chicken and dumpling soup

1Cut up a large fatty chicken

2Place in large pot
-
3Cover the chicken with water and season as desired
-
4Let simmer slowly 1 hour

5Add potatoes and carrots (large pieces)

6Remove chicken
-
7Debone chicken
-
8Season with celery salt
-
9Make dumplings
-
10Mix 3 eggs, 1 tsp salt
-
11Boil 1 cup water with 1 tsp butter in it
-
12Add to eggs
-
13Add enough flour until you can drop a dumpling from a spoon (it should be sticky)

14Add dumplings to mixture chicken cooked in.

15Cover and cook 20 minutes

16Cook rice by mixing 2 c water, 1/2 c rice and 1/2 tsp salt. Cook 1 hour

17When dumplings are cooked, serve chicken soup, vegetables, and dumplings over rice.
