Ingredients For chicken and dumpling soup

  • 1 lg
    fatty chicken
  • carrots - large chunks
  • water
  • seasoning
  • potatoes - large chunks
  • celery salt
  • DUMPLINGS:
  • 3 lg
    eggs
  • 1 tsp
    salt
  • 1 c
    water
  • 1 tsp
    butter
  • flour
  • RICE:
  • 2 c
    water
  • 1/2 c
    rice
  • 1/2 tsp
    salt

How To Make chicken and dumpling soup

    Cut up a large fatty chicken

    Place in large pot
  • 3
    Cover the chicken with water and season as desired
  • 4
    Let simmer slowly 1 hour
  • 5
    Add potatoes and carrots (large pieces)

    Remove chicken
  • 7
    Debone chicken
  • 8
    Season with celery salt

    Make dumplings
  • 10
    Mix 3 eggs, 1 tsp salt
  • 11
    Boil 1 cup water with 1 tsp butter in it
  • 12
    Add to eggs
  • 13
    Add enough flour until you can drop a dumpling from a spoon (it should be sticky)

    Add dumplings to mixture chicken cooked in.

    Cover and cook 20 minutes

    Cook rice by mixing 2 c water, 1/2 c rice and 1/2 tsp salt. Cook 1 hour

    When dumplings are cooked, serve chicken soup, vegetables, and dumplings over rice.
