Ingredients For chicken and asparagus soup

    boneless skinless chicken breast
  • 1 tsp
    egg white
  • pinch
    salt
  • 1 tsp
    cornstarch mixed with 1 tsp water
  • 8 stalk
    asparagus trimmed and chopped into pieces
  • 3 c
    chicken stock
  • cilantro for garnish

How To Make chicken and asparagus soup

  • 1
    Cut the chicken breast into thin slices. Season with salt. Place in a bowl and add the egg white and cornstarch slurry. Set aside.

    In a wok or dutch oven add the stock and bring to a boil. Add the asparagus and cook about 5 minutes.
  • 3
    Rinse the chicken and add to the soup. Cook 3 more minutes. Taste and adjust seasoning for salt and pepper. Garnish with cilantro
