This was really easy to make and it took no time at all. A plus is that my children even LOVED it and asked for more.

Ingredients For broccoli-potato soup

  • 1 box
    chicken broth
  • 1/3 c
    chopped onions
  • 12 oz
    chopped broccoli
  • 2 c
    2% or skim milk
  • 1 1/3 c
    dry mashed potatoes
  • 2 c
    cubed chicken (i use bonelss thighs)
  • 1 c
    shredded swiss cheese
  • salt and pepper to taste

How To Make broccoli-potato soup

    In a large saucepan, brown chicken and onions together, until chicken is done and onions are translucent.

    Add frozen broccoli and chicken broth.Heat to boiling.
  • 3
    Stir in milk and dry potatoes until well blended.
  • 4
    Add cheese and salt and pepper.
  • 5
    Heat over low heat about 5 minutes, stirring occasionally, until cheese is melted and soup is hot.
