My German mom used to make homemade chicken soup and add Eierstich (egg custard - see recipe: https://www.justapinch.com/recipes/soup/other-soup/eierstich-egg-custard-soup-garnish.html?r=1) If you make the soup with no noodles, it could easily be gluten-free. This version is a typical Amish recipe, especially with the apple included.

Ingredients For amish chicken soup

  • 3 lb
    chicken
  • 2 qt
    water
  • 1 1/2 c
    chicken stock
  • 2 c
    carrots, chopped
  • 2 c
    celery, chopped
  • 1 c
    onions, chopped
  • 1
    tart apple, cored and chopped (optional)
  • 2 tsp
    salt (or to taste)
  • 1/2 tsp
    pepper (or to taste)
  • 4 c
    egg noodles (homemade if available - omit if going gluten-free)
  • eierstich - egg custard garnish (optional - adds protein, not carbs!)

How To Make amish chicken soup

  • 1
    Place chicken in a soup pot with 2 quarts of water. Cover and cook for 2 1/2 hours, or until chicken is tender.

    Remove chicken from the pot and debone. Strain the broth. Return chicken to the broth.

    Add chicken stock, veggies, apples (if using) and seasonings until vegetables are soft.

    Add noodles and cook for another 8-10 minutes. Before noodles are done, add (optional) Eierstich - Egg Custard (see recipe) and heat until warm.
