2inches peeled ginger sliced

- BEEF AND MARINADE

8 ozshaved rib eye steak

1 Tbspeach grated ginger and minced garlic

- FOR THE SOUP

7 ozdried rice noodles cooked acccording to package directions drained

1 cbean sprouts
-
4green onions chopped
-
fresh cilantro, mint, and basil
How To Make vietnamese beef noodle soup

1For the broth Mix all ingredients in a pot. Bring to a boil and reduce to a simmer and simmer 30 minutes. Strain the broth into a clean pan and dischard the solids.

2Mix the shaved rib eye with the marinade ingredients and set aside.

3Place the noodles in 4 bowls. Top with the raw rib eye, bean sprouts and green onions. Ladle the hot broth over the meat (this will cook the meat perfectly).

4Top with the herbs. Serve with lime wedges and hoisin sauce if desired.
