This is a great way to clean out left over veggies. My neighbor lady keeps a container for little dabs of veggies in her freezer. When it gets full, she makes soup. So, this is inspired by her. You could also do this in a crock pot. Play around with the flavors and veggies your family likes. Freezes well.

Ingredients For vegetable beef soup

  • 1 lb
    ground beef
  • 1 sm
    onion diced
  • 2 c
    v 8 juice
  • 4-6 c
    beef broth
  • 4-6 lg
    potatoes chopped bite sized
  • 3-4
    carrots chopped bite sized
  • 4-6 c
    mixed vegetables ( see note above)
  • 1 can
    corn
  • 1 can
    green beans
  • 1 can
    stewed tomatoes
  • 1 can
    rinsed beans (any kind you want)
  • salt and pepper to taste

How To Make vegetable beef soup

    Scramble cook the ground beef and onions until no longer pink. Drain off any fat.

    Add V8 and beef broth, potatoes & carrots. Let this simmer until the potatoes and carrots are mostly tender.

    Add mixed left over veggies (4-6 cups) OR 2-3 bags of frozen mixed veggies 1 can chopped stewed tomatoes 1 can corn 1 can green beans (or whatever veggies you want to add) 1 can beans (I use rinsed kidney beans) salt and pepper to taste Sometimes I add a bit of oregano or thyme... whatever makes you happy. Sometimes I add a couple of bullion cubes or some Kitchen Bouquet if it isn't beefy enough. Kick it up with a bit of cayenne pepper or some hot sauce if you like.
