A lot of people have different versions of this. But this is a version I came up with. This makes a large amount, but it does freeze well. Hope you enjoy it.

Ingredients For taco soup

2 clovegarlic, minced

1 lgred onion, chopped

1 lggreen pepper, chopped

2 lbground beef or turkey

1/2 to 1 Tbspground cumin

2 pkgmild taco seasoning mix (you can use the low sodium kind)

1/4 tspcayenne pepper (or to taste)

2 candiced tomatoes. or one can of diced and one can of rotel if you want it spicer.

2 canof whole kernel corn, or one bag frozen
-
2 canblack beans, drained
-
sour cream (optional)
-
cheddar cheese, sliced green onions (optional)

1 pttomato juice
How To Make taco soup

1Add ground beef or turkey and cook until browned, drain

2Add the garlic, onions and green peppers. cook for 4-5 minutes, or until softened

3Add the packages of taco seasoning and the cumin and cayenne pepper
-
4Add the canned tomatoes, corn, black beans and tomato juice
-
5Turn down the heat to low, cover and simmer for 20-30 minutes to blend all the flavors
-
6If wanted, add the optional cheese, sour cream and green onions on top
