This is a very good soup and so easy to make. I always make up a big batch and then freeze the left overs for a future dinner.

Ingredients For taco soup

  • 1 lb
    lean hamburger
  • 1 lg
    onion ; chopped
  • 4 c
    water
  • 1 (10oz) can
    enchilada sauce
  • 1 (15oz) can
    tomato sauce
  • 2 (10oz) can
    tomatoes with green chili's
  • 1 (10.75oz can
    tomato soup
  • 1 (15oz) can
    red kidney beans ; drained
  • 1 (15oz) can
    pinto beans
  • 1 (15oz) can
    black beans
  • 1 can
    corn niblets
  • 1 can
    sliced black olives
  • 1 sm
    can jalapenos , optional
  • 1 pkg
    taco seasoning mix
  • salt and pepper
  • 1 tsp
    chopped garlic(from a jar)
  • 1 tsp
    parsely flakes
  • GARNISH
  • sour cream
  • shredded cheddar cheese
  • frito's corn chips

How To Make taco soup

  • 1
    In a large dutch oven or pot ; cook hamburger and chopped onion until browned , drain off grease.

    Add all the remaining ingredients except garnish items ; Mix all together.

    Bring to a boil ; reduce the heat to low and simmer for at least 1 hour.

    Serve in individual bowls and add sour cream , cheese and broken up corn chips . mix and enjoy !
