I Love Love Love Swiss Chard! and at my local supermarket, I seen it wasn't too expensive. So I got a Couple bunches. Not knowing what I was gonna use it for, But I was determined. So I tweaked a known recipe for 'Spinach Soup' and replaced it with Swiss Chard. It's a delicious hearty vegetarian soup. I hope you all give this a try. It's a Keeper!

Ingredients For swiss chard soup

4 cswiss chard (stem removed and rougly chopped)

6 cbeef stock
-
1vadallia onion
-
2 stalkcelery
-
2 clovegarlic
-
1 cankidney beans (drained & rinsed)

1 canchick peas (drained & rinsed)

1 cancannelini beans (drained & rinsed)

2 cupsfrozen cauliflower

How To Make swiss chard soup

1Dice the Celery and the Onion, and Sweat in a medium sauce pot until translucent and tender then add the minced Garlic and cook for 1 minute.

2Once translucent, Add The 2 cans of drained and rinsed beans, and chickpeas and cook for 3-4 mins

3Add the Beef Stock and stir. Allow to come up to a simmer.

4Once up to a complete simmer, add the Swiss Chard and allow to wilt (May take a few additions)

5Once the Swiss Chard has wilted and cooked down. Add the Cauliflower, and warm threw.

6Once the Cauliflower is fork tender, serve piping Hot and enjoy with a bit of Parmesan Cheese on top :)
