easy stuffed pepper soup

Tuesday nights I am currently attending a mentoring class called "The Home Experience". Once finished in November I hope to mentor ladies at my home with the same program. This week we joined up in the kitchen & made this soup. It is so delicious on a cold night with some garlic bread that I had to come home and recreate it. I did add a few addt'l spices; feel free to do the same. I do believe that the beef broth adds such a richness to this soup & I would keep that the same. I added info below on the program & a link for the book & DVD's that we watch in case anyone is interested.

Ingredients For easy stuffed pepper soup

  • 2 lb
    ground beef, lean
  • 4 c
    green bell peppers, diced or sliced
  • 3 c
    bell peppers, red, yellow and orange, diced (1 of each color)
  • 2 bag
    uncle ben's whole grain medley, brown & wild rice
  • 2 can
    italian sauce, 28 oz. each
  • 1 md
    onion, diced
  • 1 box
    beef broth, 32 oz.
  • 3 c
    water
  • 1 tsp
    garlic powder
  • 2 tsp
    oregano, dried
  • 1 Tbsp
    italian seasoning
  • 2 tsp
    black pepper
  • salt to taste

How To Make easy stuffed pepper soup

    Fry up your beef & sauté onions at the same time then drain off grease and place in a large soup pot.

    Dice or slice up all your peppers and place in the soup pot.

    Add your sauce and beef broth.
  • 4
    Add the already cooked rice to the pot also. It is a rice for the microwave but perfect to use in a soup that you want to fix up quickly.

    Cook for 45 minutes to an hour on the stovetop over medium heat until peppers are tender. I stirred it occasionally and covered the pot while it cooked.

    Serve up with some yummy biscuits, garlic bread or your favorite crackers.
