I love this soup it is always better the next day I add different colored peppers to this, if you like it with a kick add a few chopped Jalapeno's.. And I put a twist on this also and add Italian sausage

Ingredients For stuffed pepper soup

    ground beef
  • 3 lg
    peppers one green , one yellow, one red
  • 1 lg
    can tomato sauce
  • 1 lg
    can whole or diced tomatos with juice
  • 3
    beef bouillon cubes
  • 1/2 c
    brown sugar
  • 2 tsp
    salt
  • 3 tsp
    black pepper
  • 2 Tbsp
    soy sauce
  • 3-4 c
    white rice

How To Make stuffed pepper soup

    In a Skillet add beef and browm over med high heat, drain off fat.

    Add peppers and beef in a big soup pot and saute over med heat for 7 minutes.

    Stir in remaining ingrediants, salt, pepper, tomatoes including juice, bouiollon, brown sugar everything except rice,Cover and cook on low for 45 minutes.

    add rice and simmer for 15 minutes.

    OPTIONAL... For a twist I sometimes use 1 lb of groud beef and 1 lb Italian sausage, and a bit of basil and orageno..
