Ingredients For stuffed green pepper soup

  • 1 tsp
    olive oil
  • 1 lb
    lean ground beef
  • 1 tsp
    dried italian seasoning
  • 1 md
    onion, cut into 1/2 in pieces
  • 2 lg
    green bell peppers cut into 1/2 in pieces
  • 2 clove
    garlic- 2 tsp minced
  • 1 tsp
    kosher salt
  • 1/2 tsp
    black pepper
  • 3/4 c
    long grain white rice uncooked
  • 4 c
    beef broth
  • 28 oz
    tomato puree
  • 10 oz
    diced tomatoes
  • 2 Tbsp
    worcestershire sauce
  • 1-1/2 c
    pepper jack cheese grated
  • 1/4 c
    parsley - fresh or dried

How To Make stuffed green pepper soup

    Heat the olive oil in a large dutch oven overbith Italian seasoning and cook. Breaking up the beef into smaller pieces until brown, 4-6 minutes. Drain any grease

    Add the onion and bell peppers and cook, stirring, until they start to softenm 4-6 minutes. Stir in the garlic, salt and pepper and cook for 30 seconds.

    Stir in the rice, then add the broth, tomatoe puree and diced tomatoes. Stir well to combine all ingredients.

    Bring the soup to a simmer, then reduce the heat to low and cover and cook until the rice is tender, about 25 minutes. Stir in Worcestershire sauce. Ladle into bowls and top with cheese and parsley.
