1 tspolive oil

1 lblean ground beef

1 tspdried italian seasoning

1 mdonion, cut into 1/2 in pieces

2 lggreen bell peppers cut into 1/2 in pieces

2 clovegarlic- 2 tsp minced

1 tspkosher salt

1/2 tspblack pepper

3/4 clong grain white rice uncooked

4 cbeef broth
-
28 oztomato puree
-
10 ozdiced tomatoes
-
2 Tbspworcestershire sauce
-
1-1/2 cpepper jack cheese grated

1/4 cparsley - fresh or dried
How To Make stuffed green pepper soup

1Heat the olive oil in a large dutch oven overbith Italian seasoning and cook. Breaking up the beef into smaller pieces until brown, 4-6 minutes. Drain any grease

2Add the onion and bell peppers and cook, stirring, until they start to softenm 4-6 minutes. Stir in the garlic, salt and pepper and cook for 30 seconds.

3Stir in the rice, then add the broth, tomatoe puree and diced tomatoes. Stir well to combine all ingredients.

4Bring the soup to a simmer, then reduce the heat to low and cover and cook until the rice is tender, about 25 minutes. Stir in Worcestershire sauce. Ladle into bowls and top with cheese and parsley.
