Very easy to make ahead and cook overnight or make in the a.m. for supper that night. My entire family loves it. It's great to take to a potluck soup supper, too.

Ingredients For slow cooker beef stew

  • 1 1/2 lb
    beef chuck roast, cut into 1 inch cubes) or can use stew meat
  • 1 1/2 lb
    potatoes cut into bite sized pieces
  • 6 md
    carrots, cut into bite sized pieces
  • 3
    stalks celery, cut into bite sized pieces
  • 1
    onion, cut into bite sized pieces
  • 3 Tbsp
    flour
  • 1
    can beef broth
  • 1
    can (14 1/2 oz.) diced tomatoes
  • 3 Tbsp
    canola oil
  • 1 tsp
    dry mustard
  • 1/2 tsp
    dried thyme
  • 1 tsp
    diced garlic
  • 1 tsp
    browning sauce if desired

How To Make slow cooker beef stew

  • 1
    Place meat in zip lock bag with flour. Seal and toss well to coat. Brown in oil. Layer ingredients in crockpot in this order: meat, carrots, potatoes, celery, onion, beef broth, tomatoes, garlic, thyme, mustard. Cook on high for 2-3 hours, then turn on low for about 4-5 hours or until tender. You can stir to mix ingredients after the first couple of hours.
