this is my tweaked out menudo, I've been making it this way for about 20yrs, and my family and friends like it this way, sometimes I do add a couple pounds of pork to it also. This makes a lot of soup.

Ingredients For sandys menudo

1cows foot

2pigs feet
-
5 lbbeef honeycomb tripe

5 lbbeef stew meat

3 or 4beef shanks
-
1 lgonion, diced

5 or 6 clovegarlic , minced

3 Tbspcumin
-
3 Tbsporegano, dried

3 Tbspchili powder
-
3 or 4bay leaves dried

1 or 2 tspcayenne pepper

1 tspadobo powder
-
2 pkgsazon seasoning
-
1/2 csofrito
-
salt & pepper to taste
-
2 handfuls chopped cilantro
-
juice from 2 lemons
-
1huge can hominy
-
water
How To Make sandys menudo

1wash tripe and feet, cut tripe into bite size pieces.

2put tripe ,feet, and all meat in a very large pot, cover with water, and put to simmer, add everything but the lemon juice and the hominy. (you can add 1 or 2 tsp of red pepper flakes if you like)

3Simmer for a few hours till meat is very tender, remove meat and feet and bones with a slotted spoon.cut meat into bite sized pieces and return to pot.

4add hominy and lemon juice and cook about an hour longer.

5serve with lemon wedges, jalapenos,or red pepper flakes, diced onion and cilantro with lots and lots of corn tortillas
