Ingredients For reuben soup

2 Tbspbutter

1 mdonion diced

6 clovegarlic minced

salt and pepper to taste

2 Tbspbutter melted

1/4 cflour
-
32 ozchicken stock

2 chalf and half
-
1/2 cthousand island or russian dressing

1 1/2 csauerkraut drained

12 ozdeli corned beef chopped

2 cshredded swiss cheese
How To Make reuben soup

1Add the butter to a large stock pot. Melt the butter and add the onion, and garlic. Saute 5 minutes. Reduce heat to med low. In a small bowl place the melted butter and add flour and 1/4 cup chicken stock. Mix well. Add the flour mixture to the pot and cook 2 minutes. Add the rest of the chicken stock and cook 2 minutes.

2Stir in the half and half, thousand island dressing, sauerkraut, and corned beef. Let simmer for 10 minutes. Add the Swiss cheese and stir until cheese is melted.

3Remove from heat and serve
