Ingredients For my poor man's stew

  • 2 lb
    ground beef
  • salt & pepper
  • 4 lg
    potatoes, peeled and cubed
  • 2 tsp
    smoked paprika
  • 2 tsp
    herbs de Provence
  • 1 lg
    carrot, peeled and sliced
  • 3 lg
    celery stalks, chopped
  • 1 md
    onion, sliced
  • 6 clove
    garlic, minced
  • 1 tsp
    dried oregano
  • 1 tsp
    chipotle chili powder
  • 3 c
    beef broth
  • 3 Tbsp
    tomato paste
  • 2 tsp
    Worcestershire sauce
  • 1 tsp
    tarragon

How To Make my poor man's stew

    Brown the ground beef in a skillet and season with salt and pepper. Drain and add to crock pot.

    Place the potatoes on top and season with smoked paprika and herbs de Provence.Top with carrots, celery, onion, and garlic. Season with oregano and chipotle chili powder.

    Mix the beef broth, tomato paste, and Worcestershire together. Pour over the all the ingredients in the crock pot. Sprinkle with Tarragon. Cook on low for 8 hours.
