I love soup in the cold weather. This was my spin on several recipes I've read online that sound yummy. It turned out great!

Ingredients For momma's italian soup

  • 1 lb
    italian sausage, no casings
  • 1 md
    onion, diced
  • 1 clove
    garlic, minced
  • 1 1/2 tsp
    sweet basil
  • 1 tsp
    oregano, dried
  • 1 md
    red or orange pepper, diced
  • 2 sm
    zucchini, chopped
  • 2 can
    beef broth
  • 1 can
    vegetable broth
  • 1 can
    petite diced tomatoes
  • 1 can
    cannelini beans
  • 1 pinch
    crushed red pepper
  • 1
    bay leaf

How To Make momma's italian soup

    Brown Italian sausage with garlic, diced pepper, and diced onion. Drain and add to stock pot.

    Add in basil, oregano, tomatoes, bay leaf, a good sprinkle of crushed red pepper, and vegetable stock. Bring to slow simmer.

    Add chopped zucchini, cannelini beans, beef broth, and 2 cans of water. Let simmer until zucchini is tender.

    Top with freshly grated Parmesan cheese.
