I love soup in the cold weather. This was my spin on several recipes I've read online that sound yummy. It turned out great!

Ingredients For momma's italian soup

1 lbitalian sausage, no casings
-
1 mdonion, diced

1 clovegarlic, minced

1 1/2 tspsweet basil

1 tsporegano, dried
-
1 mdred or orange pepper, diced

2 smzucchini, chopped
-
2 canbeef broth
-
1 canvegetable broth
-
1 canpetite diced tomatoes
-
1 cancannelini beans
-
1 pinchcrushed red pepper

1bay leaf
How To Make momma's italian soup

1Brown Italian sausage with garlic, diced pepper, and diced onion. Drain and add to stock pot.

2Add in basil, oregano, tomatoes, bay leaf, a good sprinkle of crushed red pepper, and vegetable stock. Bring to slow simmer.

3Add chopped zucchini, cannelini beans, beef broth, and 2 cans of water. Let simmer until zucchini is tender.

4Top with freshly grated Parmesan cheese.
