If you are from the area, you may have heard of the Venus DeMilo restaurant and their infamous minestrone soup. Well, I used their soup as my inspiration when creating this recipe. It came out quite close! I used the Del Monte mixed vegetables since it is closest to the veggies used in their soup. But feel free to use another brand if Del Monte is not available to you. Enjoy!

Ingredients For minestrone soup

  • 1 lb
    ground beef
  • 1/2 box
    orzo pasta
  • 1 sm
    can hunt's tomato paste w/ basil, garlic, & oregano
  • 1 can
    del monte mixed vegetables, with liquid
  • 1 sm
    can of lima beans
  • 1 can
    crushed tomatoes
  • 2
    beef bouillon cubes
  • 1 pkg
    dry onion soup mix
  • 1
    bay leaf
  • 2 qt
    water
  • black pepper, to taste

How To Make minestrone soup

  • 1
    Over medium heat, in a large pot, cook ground beef until completely browned. Stir in the dry onion mix. Cook for additional 5 minutes. Drain as much fat from the beef as possible.

    Add water. Stir in your tomato paste, crushed tomatoes, beef bouillon, vegetables, and bay leaf. Bring to a boil. Add in orzo, and cook until pasta is tender. About 10 minutes. Season with black pepper.
