My son put this together one night and it turned into a favorite.

Ingredients For mike's lentil soup

  • 1 lb
    ground beef
  • 1 pkg
    conecuh sausage sliced into bite size pieces.
  • 1 32-48 oz
    beef broth or stock
  • 1 can
    fire-roasted corn, partially drained
  • 1 can
    fire roasted diced tomatoes
  • 1 bag
    frozen soup starter vegetables
  • 2
    diced potatoes or can of diced potatoes, drained
  • 1 c
    dry lentils
  • 1 sm
    onion, diced
  • salt & pepper to taste

How To Make mike's lentil soup

  • 1
    Brown hamburger and onion, drain off excise grease.
  • 2
    Add sliced sausage to pan and potatoes and brown slightly.
  • 3
    Add everything to stock pot. Bring to a boil, then turn heat down to simmer.
  • 4
    Cook for 30-45 minutes
