Got this recipe from my daughter. I always fix it for large family gatherings and everyone always comments on how good it is. Hope you enjoy it also!

Ingredients For sausage, ground beef & zucchini stew

  • 1 lb
    ground beef
  • 1 lb
    bulk port sausage
  • 2 can
    diced tomatoes (14 1/2 oz. each)
  • 2 md
    green peppers, cut into 1/2" pieces
  • 2 c
    thinly sliced celery
  • 1 c
    chopped onion
  • 6 md
    zucchini, halved & cut into 1/2" slices
  • 1 c
    tomato juice
  • 1 tsp
    italian seasoning-i use herb de provence
  • 1 tsp
    dried oregano
  • grated parmesan cheese

How To Make sausage, ground beef & zucchini stew

    In dutch oven or large saucepan, over medium heat, cook beef & sausage until no longer pink; drain & set aside.

    Drain tomatoes, reserving juice; set tomatoes aside. In the same pan, combine the peppers, celery, onion & reserved juice. Cover & cook over medium heat for 10 minutes.

    Add meat, tomatoes, zucchini, tomato juice & seasonings. Cover & cook 15 minutes or until zucchini is tender, stirring occasionally.
  • 4
    Serve, garnish with cheese.
