Ingredients For meatball stew

  • 1 lb
    ground beef
  • 1/4 c
    fine dry bread crumbs
  • 1/4 c
    finely chopped onion
  • 1
    egg, slightly beaten
  • 1 tsp
    salt
  • 2 Tbsp
    shorteneing
  • 2 c
    v-8 juice
  • 1 c
    thinly sliced carrots
  • 1 Tbsp
    sugar
  • 1/8 tsp
    basil leaves,crushed
  • 1 can
    small whole potatoes, drained
  • 2 Tbsp
    flour

How To Make meatball stew

    In a bowl, mix thoroughly ground beef,bread crumbs,onion,egg and salt. Shape into 16 meatballs. In skillet, brown meatballs in shortening; pour off fat. Add 1 1/2 C. V-8 juice,carrots,sugar and basil. Cover; cook over low heat 15 minutes. Stir occassionally. Add potatoes, cook 5 minutes or until done. Blend remaining juice into flour until smooth, slowly stir into sauce. Cook, stirring until thickened.
