When I lived in New Mexico, my best friend made this soup all the time....I had to have the recipe!

Ingredients For maria's taco soup

  • 1 3/4 lb
    ground chuck
  • 1
    large onion, chopped
  • 2 clove
    garlic, minced
  • 2 - 14.5 oz
    cans diced tomatoes with juice
  • 16 oz
    can kidney beans, drained
  • 16 oz
    can pinto beans, drained
  • 16 oz
    can black beans, drained
  • 15 1/4 oz
    can whole kernal corn, drained
  • 14 1/2 oz
    can chicken broth
  • 1 pkg
    taco seasoning mix

How To Make maria's taco soup

    In a large pot, cook beef, onion and garlic. Drain and return to pot.

    Stir in rest of ingredients. Bring to boil, reduce heat and simmer uncovered for about 30 minutes. Serve with taco strips, fried or baked until crisp. Serve with a dollop of sour cream, chopped green onions and grated cheese on top for garnish if desired
