My family loves this soup. I originally canned it "Bacon Cheeseburger Soup," but my hubby suggested I call it"potato soup with meat.". So I settled on loaded potato soup.

Ingredients For loaded potato soup

  • 1 lb
    ground beef
  • 1 sm
    onion, diced
  • 3/4 c
    chopped carrots
  • 3/4 c
    chopped celery
  • 4 c
    beef stock
  • 2 c
    water
  • 4 c
    diced potatoes
  • 1 1/2 c
    whole milk
  • 1 Tbsp
    basil
  • 1/8 c
    parsley flakes
  • 12 oz
    2% velveeta like cheese
  • 5 slice
    bacon, cooked crisp, crumbled
  • salt/pepper to taste

How To Make loaded potato soup

  • 1
    Brown ground beef and onion together in soup pot. Drain, if needed.

    Add potatoes, carrots, celery, stock, and water, basil, and parsley. Cook until potatoes are tender. (I lightly mash the mixture, but leave some potatoes in chunks.)

    Add in milk, bacon, and velveeta and salt/pepper to taste.

    Allow to simmer until cheese melts, stirring occasionally to keep cheese from sticking.
