My family loves this soup. I originally canned it "Bacon Cheeseburger Soup," but my hubby suggested I call it"potato soup with meat.". So I settled on loaded potato soup.

Ingredients For loaded potato soup

1 lbground beef

1 smonion, diced
-
3/4 cchopped carrots

3/4 cchopped celery
-
4 cbeef stock
-
2 cwater
-
4 cdiced potatoes

1 1/2 cwhole milk

1 Tbspbasil
-
1/8 cparsley flakes
-
12 oz2% velveeta like cheese

5 slicebacon, cooked crisp, crumbled

salt/pepper to taste
How To Make loaded potato soup

1Brown ground beef and onion together in soup pot. Drain, if needed.

2Add potatoes, carrots, celery, stock, and water, basil, and parsley. Cook until potatoes are tender. (I lightly mash the mixture, but leave some potatoes in chunks.)

3Add in milk, bacon, and velveeta and salt/pepper to taste.

4Allow to simmer until cheese melts, stirring occasionally to keep cheese from sticking.
