Ingredients For lasagna soup

  • 1 1/2 lb
    green onion sausage
  • 1 c
    onions, chopped
  • 1 c
    carrots, cubed crinkle cut
  • 8 oz
    fresh mushrooms, sliced
  • 2 clove
    garlic, minced
  • 1 can
    14 1/2 ounce can diced tomatoes, with basil and oregano
  • 4 c
    chicken broth, low sodium
  • 1 can
    tomato sauce, 15 ounces
  • 1/2 tsp
    italian seasoning, dry
  • 1 1/2 c
    bow pasta
  • 2 c
    spinach, fresh
  • 2 c
    grated mozzarella cheese
  • 1/2 c
    parmesean cheese
  • fresh basil, chopped (optional)

How To Make lasagna soup

  • 1
    Remove sausage from casing and brown in skillet over medium heat. Add onions, mushrooms, carrots and garlic and saute with meat for 3 minutes.

    Add the next four ingredients and bring to a boil. Add pasta and simmer for about 10 minutes. Stir in spinach and cook until wilted.

    Put 1/2 in bottom of bowl and pour soup on top. Garnish with Parmesan cheese and fresh basil.
