Ingredients For lasagna soup

1 1/2 lbgreen onion sausage

1 conions, chopped

1 ccarrots, cubed crinkle cut

8 ozfresh mushrooms, sliced

2 clovegarlic, minced
-
1 can14 1/2 ounce can diced tomatoes, with basil and oregano

4 cchicken broth, low sodium
-
1 cantomato sauce, 15 ounces

1/2 tspitalian seasoning, dry

1 1/2 cbow pasta
-
2 cspinach, fresh
-
2 cgrated mozzarella cheese
-
1/2 cparmesean cheese
-
fresh basil, chopped (optional)
How To Make lasagna soup

1Remove sausage from casing and brown in skillet over medium heat. Add onions, mushrooms, carrots and garlic and saute with meat for 3 minutes.

2Add the next four ingredients and bring to a boil. Add pasta and simmer for about 10 minutes. Stir in spinach and cook until wilted.

3Put 1/2 in bottom of bowl and pour soup on top. Garnish with Parmesan cheese and fresh basil.
