I make this stew out of my left over roast dinner..I even use the same roaster the roast was cooked in ; I toss it all together after dinner and put roaster and all in the refrigerator until the next day I put it in the oven and let it cook! My mom was the one to teach me how to make this in the oven . I add more veggie's than my mom did and she always called my version "everything but the kitchen sink stew " The amount of vegetables depend on how many you had left over from your Roast dinner meal.

Ingredients For karla's oven stew

left over roast meat ; cut up (more the better)

left over veggie's ; potatoes , onions , carrots ; cut up

left over gravy ; i make mine from the broth the roast was cooked in but if you don't , then save the broth and use in the stew.

1 cangreen beans ; drained
-
1 canpeas ; drained
-
1 cancorn ; drained
-
1 canstew tomatoes
-
2 stickcelery ; chopped
-
1 lgonion ; peeled and chopped
-
1 lgcarrot, sliced ; if needed
-
2-3 mdpotatoes , if needed ; peeled and cut into chunks

6 cwater ; enough to almost fill the roaster

1 pkgstew seasoning mix

1 Tbspparsley flakes
-
1 tspgarlic ; minced from out of a jar or granulated garlic powder
-
1 Tbspkitchen bouquet
-
salt and pepper to taste
-
1/2 mdhead of cabbage , cut in wedges ; optional
How To Make karla's oven stew

1Use any left over meat , gravy and vegetables that you have over from your roast dinner the night before.

2Chop up the carrots , celery , onion and potatoes.

3Drain the corn , peas and green beans.

4Throw all the ingredients together in a roaster ( I use a roaster pan or my large dutch oven ) Add the un-drained canned tomatoes.

5Add enough water to cover all of your fixings for the stew. I used about 10 cups of water for the amount shown in these pictures. It was a big batch of stew.

6Add the spices and the kitchen bouquet seasoning.

7Mix it all together.

8Cover and Bake in oven @ 325° for 3-4 hrs ; stirring every once in awhile.( mainly your just wanting to cook the extra raw vegetables you put in)Leave in the oven on Low until your ready to serve.

9NOTE: if you want a thicker soup , add enough instant mashed potatoes until the desired thickness you want.

10If you are going to put cabbage in the stew , cut the cabbage into wedges and place in the hot stew the last 30 minutes of cooking time.

11Can be cooked in a crock pot also for 4-6 hours on low setting.
