Ingredients For italian sausage tortellini soup

1 lbbulk italian sausage

1 cchopped onion

3 clovegarlic, minced

6 cbeef broth
-
3 3/4 cwater
-
2 1/4 ctomatoes, canned and chopped, with liquid

1 1/2 cchopped green pepper

1 ccarrot, sliced
-
1 ctomato sauce, italian seasoned
-
3/4 ctomato paste
-
3/4 tspdried oregano
-
3/4 tspdried basil
-
1bag frozen tortellini
-
1 lgzucchini, sliced & quartered

6 Tbspfresh parsley, chopped

salt & pepper to taste
How To Make italian sausage tortellini soup

1Crumble sausage into a large saucepan, cook over medium heat til no longer pink. Remove w a slotted spoon to paper towels. In one tablespoon of drippings, saute carrot, onion, & garlic til tender. Stir in broth, water, tomatoes, green pepper, tomato sauce, tomato paste, oregano & basil.

2Bring to a boil. Reduce heat; simmer uncovered for 30 minutes. Skim fat, stir in sausage, tortellini, zucchini & parsley. Cover and simmer 25-30 minutes longer or until tortellini is tender.
