Ingredients For irish beef stew with guinness

2 Tbspolive oil

2 lbpotatoes, in 1" cubes

1/2 lbcarrots, sliced

1 Tbspchopped parsley
-
1/2 cguinness stout
-
1/4 cbeef stock
-
3 Tbspflour
-
1 tsprosemary, dried
-
1 tspdried thyme
-
2garlic cloves, chopped
-
1 lgyellow onion, cut into 1/4" slices
-
2 lbbeef stew meat, cut into 2" cubes

3bay leaves
-
salt and pepper to taste
How To Make irish beef stew with guinness

1Heat a 6 quart stove-top casserole and add the oil and bay leaves.

2Cook the bay leaves for a moment and then add the meat.

3Brown the meat on both sides on high heat (flour the meat first).

4Add the sliced onion and cook until the onions are translucent.

5Reduce heat to low and add the garlic, thyme, rosemary and flour; stir until smooth.

6Add the beef stock and stout.

7Simmer, stirring until the stew thickens a bit.

8Add the remaining ingredients and cover.

9Place the pot in a 275 degree oven for about 2 hours, stirring a couple of times.

10Add salt and pepper to taste.
