Ingredients For hopi hominy stew

  • 1 lb
    lean ground beef
  • 1 lg
    yellow onion
  • 1 Tbsp
    chili powder
  • 3 md
    potatoes, peeled and diced
  • 1/2 lb
    carrots, peeled and diced
  • 1 can
    (15 oz) white hominy
  • 1 can
    (15 oz) tomatoes, diced
  • 1 can
    (4 oz) green chilies, chopped
  • 1 1/2 c
    beef broth
  • salt and pepper, to taste
  • 1 tsp
    cumin powder

How To Make hopi hominy stew

  • 1
    In a large pot over medium heat, cook ground beef until evenly brown. Stir in onions, and saute until soft and translucent.

    Season with chili powder, and cook for about 2 minutes. Add potatoes, carrots, hominy, tomatoes and chilies and cumin. Pour in beef broth. Season to taste with salt and pepper.

    Reduce heat, and simmer 2 hours, or until potatoes and carrots are tender.
