Ingredients For hopi hominy stew

1 lblean ground beef

1 lgyellow onion

1 Tbspchili powder

3 mdpotatoes, peeled and diced

1/2 lbcarrots, peeled and diced

1 can(15 oz) white hominy

1 can(15 oz) tomatoes, diced

1 can(4 oz) green chilies, chopped
-
1 1/2 cbeef broth
-
salt and pepper, to taste

1 tspcumin powder
How To Make hopi hominy stew

1In a large pot over medium heat, cook ground beef until evenly brown. Stir in onions, and saute until soft and translucent.

2Season with chili powder, and cook for about 2 minutes. Add potatoes, carrots, hominy, tomatoes and chilies and cumin. Pour in beef broth. Season to taste with salt and pepper.

3Reduce heat, and simmer 2 hours, or until potatoes and carrots are tender.
