Ingredients For hamburger & potato soup

  • 1 md
    onion, diced
  • 2 Tbsp
    olive oil
  • 1 1/2 lb
    lean ground beef
  • 4 lg
    gold potatoes
  • 1 lg
    carrot, scraped and diced
  • 1 lg
    stalk celery, peeled and diced, leaves and all
  • 2 box
    (32 oz. each) beef broth
  • handful of frozen english peas
  • 2 Tbsp
    fresh chopped parsley, more for garnishing if desired
  • 1 Tbsp
    fresh, chopped thyme or 1 tsp. dried thyme
  • salt & pepper to taste

How To Make hamburger & potato soup

  • 1
    Heat olive oil in a large dutch oven over medium heat, and sauté diced onions, celery and carrots. until vegetables have softened.

    Add in the hamburger meat and brown ground beef till no longer pink, drain off grease.

    Pour in the beef broth, then add in the diced potatoes and herbs. Cover and bring to a simmer. Cook on low heat for about 20-25 minutes, just till potatoes are fork tender.

    Stir in frozen peas in the last few minutes, just to thaw and warm.

    Adjust salt and pepper as needed and garnish with more fresh, chopped parsley if desired.
