Ingredients For hamburger & potato soup

1 mdonion, diced

2 Tbspolive oil
-
1 1/2 lblean ground beef
-
4 lggold potatoes
-
1 lgcarrot, scraped and diced

1 lgstalk celery, peeled and diced, leaves and all

2 box(32 oz. each) beef broth
-
handful of frozen english peas
-
2 Tbspfresh chopped parsley, more for garnishing if desired
-
1 Tbspfresh, chopped thyme or 1 tsp. dried thyme

salt & pepper to taste
How To Make hamburger & potato soup

1Heat olive oil in a large dutch oven over medium heat, and sauté diced onions, celery and carrots. until vegetables have softened.

2Add in the hamburger meat and brown ground beef till no longer pink, drain off grease.

3Pour in the beef broth, then add in the diced potatoes and herbs. Cover and bring to a simmer. Cook on low heat for about 20-25 minutes, just till potatoes are fork tender.

4Stir in frozen peas in the last few minutes, just to thaw and warm.

5Adjust salt and pepper as needed and garnish with more fresh, chopped parsley if desired.
