This recipe is a riff of the popular JAP Blue Ribbon recipe* by Michelle from London. The amount of Guinness was too much for me so I found the version right for us, but eternal gratitude to Michelle for inspiring me to make this yummy stew! =^..^= *Beef in Guinness (Stout Beer) by Michelle S.

Ingredients For guinness beef with carrots

  • 2-3 Tbsp
    olive oil
  • 2 Tbsp
    flour
  • some
    salt and pepper, to taste
  • 2 1/2 lb
    stew beef, cut into chunks
  • 1 lg
    onion, diced
  • 1 bag
    baby carrots or 6 medium carrots, peeled and chunked
  • 1 bottle
    Guinness stout beer

How To Make guinness beef with carrots

    Heat the olive oil in a Dutch oven over medium-high.

    Season the flour with salt and pepper; stir. Add the beef and coat well. Brown the beef in the olive oil, then remove it from the pan.

    Add the onion to the pan and cook until it is soft and transparent.

    Add the beef back in the pan with the cooked onions, then add the baby carrots.

    Cover with the Guinness beer, adding water if needed to cover the contents. Stir well.

    Bring to a boil, then reduce the heat to low. Cover and let simmer for 1 1/2 hours, stirring every 10 minutes. Add a little water if needed during cooking.

    Remove the lid to reduce the liquids to the desired consistency. Cook until beef is tender and serve over mashed potatoes or cooked rice.
