guinness beef with carrots
This recipe is a riff of the popular JAP Blue Ribbon recipe* by Michelle from London. The amount of Guinness was too much for me so I found the version right for us, but eternal gratitude to Michelle for inspiring me to make this yummy stew! =^..^= *Beef in Guinness (Stout Beer) by Michelle S.

Ingredients For guinness beef with carrots

2-3 Tbspolive oil

2 Tbspflour

somesalt and pepper, to taste

2 1/2 lbstew beef, cut into chunks

1 lgonion, diced

1 bagbaby carrots or 6 medium carrots, peeled and chunked

1 bottleGuinness stout beer
How To Make guinness beef with carrots

1Heat the olive oil in a Dutch oven over medium-high.

2Season the flour with salt and pepper; stir. Add the beef and coat well. Brown the beef in the olive oil, then remove it from the pan.

3Add the onion to the pan and cook until it is soft and transparent.

4Add the beef back in the pan with the cooked onions, then add the baby carrots.

5Cover with the Guinness beer, adding water if needed to cover the contents. Stir well.

6Bring to a boil, then reduce the heat to low. Cover and let simmer for 1 1/2 hours, stirring every 10 minutes. Add a little water if needed during cooking.

7Remove the lid to reduce the liquids to the desired consistency. Cook until beef is tender and serve over mashed potatoes or cooked rice.
