This soul-warming soup is adapted from a classic recipe given to me years ago by a friend in Canada.the simplest things are the best!

1 tspstick margarine

1onion,chopped

2 1/2 cupsbeef broth

2ounces french bread,cut into two slices and toasted.

1/2 cupshredded mozzarella cheese
How To Make 'french onion soup'

1Preheat broiler. in a med saucepan,melt margarine.Add onion cook, stirring as needed,until softened,about 5 min.Add broth; bring to a boil.Reduce heat and simmer,uncovered,until the onion is very tender.

2Place one slice of toast in each of two flameproof soup bowls;pour soup over toast.sprinkle each with cheese and broil until the cheese is melted and lightly browned. about 1 min .serve at once.
