Ingredients For enchilada soup

  • 6-8 lg
    tortillas, flour,fried,broken into bite size pieces
  • 2 can
    enchilada sauce,red
  • 1 pkg
    frozen corn[1 pound]
  • 2 can
    black beans, canned
  • 1 1/2 lb
    spicey pork sausage
  • 1 lg
    onion,diced
  • 1 c
    bell peppers,chopped,mixed color
  • 1 pkg
    [2 c] mexican cheese blend
  • sour cream...as garnish

How To Make enchilada soup

  • 1
    cook sauage in med PAN til no longer pink add onions and peppers cook til they soft add sauce,corn and beans bring to boil turn temp down cook bout 10 min
  • 2
    slowly add cheese to it stirrin while u add it as soon as it is melted serve in bowls with broken tortillas in bottom of bowl and sour cream on top....
