This soup is so yummy. Add whatever veggies your family likes (sometimes I leave out the celery and carrot if I don't have it and the soup turns out just as good). I have even made this soup with leftover chili as the base instead of cooking the ground beef and veggies... Equally delicious... I serve with crushed tortilla chips, shredded cheese, thinly sliced green onions & sour cream, also some hot sauce... Also, I just learned how to make homemade totillas (thanks Juliann :) so I have been serving with those as well. Use what you have and like.. cornbread too??

Ingredients For easy taco soup

1lb lean ground beef

1onion, finely chopped

1stalk of celery finely chopped

1carrot finely chopped

1clove garlic finely chopped
-
1 cancrushed tomatoes (big can)

2-3 canbeef broth
-
4-5 cwater
-
1 pkgtaco seasoning mix
-
1 canblack beans, rinsed & drained

1 cancorn, rinsed & drained

1 pinchsugar
-
seasonings of your choice, i use seasoned salt, red pepper flakes, chili powder, cumin, paprika and a dash of cinnamon & a bay leaf
How To Make easy taco soup

1Brown the meat, onion, celery, carrot and salt and pepper to taste stirring to break up meat. When meat is almost done add clove of garlic and cook until meat is done. Drain fat if any off of meat.

2Add remaining ingredients stirring well. Bring to boil, turn down heat and simmer for around 1/2 hr till done. Taste to adjust seasonings as necessary. Serve with garnishes and enjoy. Freezes well.
