easy french onion soup

I make this as a quick easy dinner, but if I have the extra time I will pick up some veal bones from my butcher roast them in oven uncovered for 1 hour at 350 then simmer them in the broth for a real richness.

Ingredients For easy french onion soup

3 boxlow sodium beef stock

7 lbwhite onions

4 clovegarlic-minced

3beef bullion cubes
-
4 Tbspunsalted butter
-
1 cchardonnay
-
1/2 bunchitialian flat leaf parsley-chopped

1 tspthyme-dried

4bay leaves
-
1 tsporegano, dried
-
1 tspbasil, dried
-
1 lbprovolone cheese
-
salt and pepper to taste
- IF YOU HAVE THE TIME FOR EXTRA RICHNESS

4 lbveal or beef bones-roasted for 1 hour
How To Make easy french onion soup

1Saute onions and garlic in butter until transparent

2Add rest of ingredients and bring to a boil.

3Reduce heat to simmer for at least 1 hour. Longer is better

4If using the roasted bones add now also

5I serve with a slice of provolone on bottom of bowl, a slice of sourdough baguette, soup, the another slice of provolone on top. I do not bake mine but you can if you choose.
