1 Tbspolive oil

1 lgonion chopped

1inch piece ginger sliced

3cinnamon sticks

8 cbeef stock

4 cwater

4whole star anise

1/2 Tbspwhole cloves

1/4 cfish sauce

1 Tbspsugar
- FOR THE PHO

12 ozrice noodles

1 mdshallot chopped

5scallions sliced on the bias

2 cbean sprouts

hand fulbasil, mint and cilantro chopped

1 lbshaved rib eye steak

2limes cut into wedges
How To Make easy beef pho

1For the broth In a large pot heat the olive oil. Add the onion, ginger and cinnamon stick. Cook for about 5 minutes. Add the stock, water, star anise, cloves, fish sauce, and sugar. lower the heat and simmer for 1 hour.

2Strain the broth and discard the solids. Cook the rice noodles according to package directions. Drain

3Add a little oil to a pan and cook the shallots for about 3 minutes.

4Divide the noodles among the bowls. Top with the shallots, raw rib eye, bean sprouts, mint, basil and cilantro. Pour the steaming hot broth over top. The broth will cook the meat. Serve immediately with lime wedges
