Had this for lunch this week at a local restaurant and decided to replicate it at home.

Ingredients For corned beef and cabbage soup (low carb)

3carrots, diced

3celery ribs, diced

1onion, diced

1cabbage head, small - finely shredded

2thick slices corned beef (from the deli), diced

32 ozbeef broth
-
2bay leaves
-
salt & pepper to taste

2 Tbspolive oil
How To Make corned beef and cabbage soup (low carb)

1Add olive olive to a soup pan or large dutch oven; heat on medium high.

2Add carrots, celery and onion and saute for 5-7 minutes.

3Add corned beef and shredded cabbage. Saute until cabbage starts to wilt.

4Add beef broth, bays leaves and salt & pepper. Simmer for an hour before serving.
