Tastes just like halupki (cabbage rolls in polish) It's so good. My friend Chelly Bundy, who is a fanatastic cook, shared this with me. She is polish, and makes the best polish food around. She really knows her stuff! Chelly uses 2 tbsp of oil in the rice, and 2 tbsp to brown the meat; feel free to do the same. She sometimes serves this with mashed potatoes.

Ingredients For easy cabbage roll soup

1 Tbspolive oil, extra virgin

1 cbrown rice, raw
-
1 qt+ 2 cups beef stock, low fat

1 1/2 lbground beef, or turkey
-
1onion, diced
-
1-2carrots, sliced into rounds
-
2-4 clovegarlic. minced
-
1/2 -1head of cabbage, thinly sliced

28 ozdiced tomatoes
-
15 oztomato sauce
-
1/2 cketchup
-
1bay leaf
-
salt and pepper
-
garlic powder
How To Make easy cabbage roll soup

1Heat a saucepan over med-high and add olive oil. Add rice and stir to coat with oil. Pour 2 cups of beef stock over the rice, bring to boil, cover and cook for 20 min.

2Heat a large, deep pot over med-high, spray with cooking spray, add the beef and cook unitl browned, drain. Season with salt, pepper and garlic powder.

3Add onions, garlic and bayleaf to meat. Cook until the onoin and carrots begin to soften, then add cabbage.

4Add the tomatoes, tomato sauce and remaining beef stock, cover the pot. Raise the heat to high until it starts to boil, then turn down to a simmer.

5Once the rice is cooked, add to the soup and continue to simmer. Adjust the salt and pepper to taste, remove bay leaf and serve. This will be very thick; like a "stoup".
