cabbage soup with beef & rice

This cabbage soup was inspired by the soup my mom made this time of year when she was on a diet. It never tasted low calorie, it's always a great comfort food. Easy enough to make for a weekday dinner. We serve with a good loaf of crusty bread (I know, it's not diet) and butter.

Ingredients For cabbage soup with beef & rice

  • 1 Tbsp
    vegetable oil
  • 1 lb
    ground beef
  • salt & pepper to taste
  • 1 md
    onion, diced
  • 2 clove
    garlic, minced
  • 1 sm
    head green cabbage, chopped
  • 3-4 md
    carrots, sliced
  • 4 c
    beef broth, low sodium
  • 3 - 8 oz can
    tomato sauce
  • 1/2 c
    white rice
  • 1
    bay leaf
  • 3 Tbsp
    brown sugar, light
  • 2 Tbsp
    fresh parsley, chopped

How To Make cabbage soup with beef & rice

    In a large soup pot, heat oil and add ground beef. Season with salt & pepper to taste; cook until brown.

    Add diced onion and minced garlic and cook until tender.

    Add cabbage, carrots, beef broth, tomato sauce, white rice, brown sugar, bay leaf and stir.
  • 4
    Simmer for about 25-30 minutes until rice is tender. Take out the bay leaf and add the chopped parsley.
