cabbage soup with beef & rice
This cabbage soup was inspired by the soup my mom made this time of year when she was on a diet. It never tasted low calorie, it's always a great comfort food. Easy enough to make for a weekday dinner. We serve with a good loaf of crusty bread (I know, it's not diet) and butter.

Ingredients For cabbage soup with beef & rice

1 Tbspvegetable oil

1 lbground beef

salt & pepper to taste

1 mdonion, diced

2 clovegarlic, minced

1 smhead green cabbage, chopped

3-4 mdcarrots, sliced

4 cbeef broth, low sodium

3 - 8 oz cantomato sauce

1/2 cwhite rice

1bay leaf
-
3 Tbspbrown sugar, light

2 Tbspfresh parsley, chopped
How To Make cabbage soup with beef & rice

1In a large soup pot, heat oil and add ground beef. Season with salt & pepper to taste; cook until brown.

2Add diced onion and minced garlic and cook until tender.

3Add cabbage, carrots, beef broth, tomato sauce, white rice, brown sugar, bay leaf and stir.

4Simmer for about 25-30 minutes until rice is tender. Take out the bay leaf and add the chopped parsley.
