Ingredients For beef vegetable barley lentil soup

  • 1 lb
    beef stew meat, cut into bite size pieces
  • 1 md
    onion, chopped
  • 1 lb
    mini red potatoes, depending on size cut in half or quartered
  • 1 bag
    baby carrots
  • 1 c
    dried lentils, rinsed
  • 3/4 c
    pearl barley
  • 8 c
    beef broth, 64 ozs
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • 1 Tbsp
    sweet paprika, not smoked
  • 1 Tbsp
    sugar
  • 1/2 tsp
    marjoram
  • 2 can
    stewed tomatoes, 14.5 ozs each

How To Make beef vegetable barley lentil soup

  • 1
    Put meat into a 5 qt. slow cooker. Layer with onions, potatoes, carrots, lentils, and barley.

    Combine broth and seasonings, pour over vegetables. Cover and cook on low for 6 hours or until vegetables, barley and lentils are tender.

    Add tomatoes and cook 2 hours longer.

    Can use ground beef instead of stew meat, but brown beef with onion before putting in slow cooker.

    You can add the tomatoes at the start, but use diced tomatoes instead of stewed.
