5 Tbspall purpose flour

60 gbutter (4 tbsp. or 1/2 cup)

1 mdonion, cut in strips

1 lhomemade beef stock (4 cubes)

100 ggrated gruyere cheese (1 to 1-1/4 cups)

1 dashred wine, if desired
How To Make basler mehlsuppe (basel flour soup)

1Cook the flour in a dry, hot skillet until light brown. Add butter to flour and mix.

2Add onions and cook until softened, about 10 or 15 minutes. Add beef stock, bring to a boil, and simmer 20 minutes. Serve with grated cheese.

3Add a dash of red wine if desired.
