asian pork & noodles in a kicking sauce
I played around with this dish, using several types of protein. My first thought was to use bite-size chunks of pork, chicken, or beef, but finally settled on using ground pork. Cooking the pork was the next step, and I decided to poach the ground pork in pepper-laced water… The sauce then pulls it all together. So yummy. So, you ready… Let’s get into the kitchen.

Ingredients For asian pork & noodles in a kicking sauce
- PLAN/PURCHASE

1/2 lbground pork

1 Tbspground white pepper
-
1/2 tspcayenne pepper
- THE SAUCE

2 Tbspgrapeseed oil

2 clovegarlic, minced
-
4 mdgreen onions, chopped. just the white parts

1 Tbspginger, minced
-
1/3 ctamari sauce
-
3/4 cchicken stock, not broth
-
1/3 ccoconut sugar
-
2 tspchili garlic sauce, or to taste
-
1 Tbsparrowroot powder
-
1/2 cfiltered water
-
1 pkgramen noodles
-
toasted peanuts, for garnish
How To Make asian pork & noodles in a kicking sauce

1PREP/PREPARE

2Gather your ingredients.

3In a saucepan, add the white pepper, and cayenne to a quart of water.

4Bring to the boil, add the ground pork, and allow to simmer for 5 to 7 minutes.

5Chef’s Note: As the pork is cooking, break it apart with a wooden spoon.

6Drain the pork and reserve.

7THE SAUCE

8Heat the oil in a saucepan over medium heat.

9When the oil begins to shimmer, add the garlic, ginger, and green onions, and then stir for about 20 seconds.

10Chef’s Note: Do not allow the garlic to burn.

11Add the tamari sauce, chicken stock, coconut sugar, and the garlic chili sauce.

12Allow the sauce to simmer, until it begins to thicken, about 2 to 3 minutes.

13Whisk the water and arrowroot powder together.

14Add to the sauce, and continue to simmer for about 5 minutes.

15Add the ground pork, stir to incorporate, and then set the burner to low until the noodles are ready.

16Chef’s Note: Prepare the ramen noodles according to package directions. Or, you could have this over rice, or traditional pasta noodles.

18Divide the ramen noodles between two bowls, then add the pork and sauce to the top, and finally garnish with some toasted peanuts. Enjoy.
