This Chili has a southwestern flare! Hubby and son had 2nds! Son and hubby added hot sauce. Topped with shredded cheese is a must, as well as steaming cornbread!

Ingredients For southwest chicken chili

2 lbchicken breast-cooked and diced

1 mdyellow onion- diced

1 canblack beans, canned

1 cancorn-drained

1 cankidney beans, canned

1 cantomatoes, canned italian-style and diced

1 cantomato sauce

2-3 Tbspchili powder

1 Tbspcumin powder

2-3 canwater

2 tspyellow cornmeal
How To Make southwest chicken chili

1On med/High heat, add oil to a dutch oven, brown chicken pieces until no longer pink. Add in chopped onion and chili powder and cumin. Stir to combined

2Lower heat. Add all canned items. Add water. Bring up heat to Boil. Continue to stir. Reduce to a simmer.; occasionally stirring for 30 minutes.

3As it simmers, sprinkle in Cornmeal until desired thickness. Serve up chili. May add shredded cheese if desired. Goes good with cornbread.
