Ingredients For pasta fagioli

  • 5 slice
    bacon, choppd
  • 1 lg
    onion, choppd
  • 2 clove
    garlic, minced
  • 2 Tbsp
    tomato paste
  • 1 sprig
    fresh rosemary
  • 4 sprig
    fresh thyme
  • 1 lg
    bay leaf
  • 2 qt
    chicken broth
  • 2 can
    cannellini beans n red kidney beans (i used pink beans with cannellini beans) draind
  • 3/4 c
    small pasta ...elbow, tiny shells (i used tubetti)
  • parmesan cheese

    IN A LARGE POT HEAT 2 TBLSPNS OF OLIVE OIL N ADD CHOPPD BACON N COOK FOR 3 MINUTES STIRRING OCCASIONALLY. THEN ADD CHOPPD ONION N GARLIC N COOK FOR 3 MORE MINUTES.

    ADD 2 TBLSPNS OF TOMATO PASTE. STIR N LET COOK ON LOW FOR 3 MINUTES.

    ADD 2 QUARTS OF CHICKEN BROTH N 2 CANS OF STRAIND BEANS, ROSEMARY N THYME SPRIGS N THE BAY LEAF...I ALSO ADDED 1/4 TSP OF CRUSHD RED PEPPER (OPTIONAL) BRING TO A BOIL THEN REDUCE TO SIMMER N COOK FOR 10 MINUTES

    REMOVE SPRIGS OF ROSEMARY N THYME DONT FORGET THE BAY LEAF...N ADD PASTA, STIR N COOK FOR 7-8 MINUTES OR UNTIL PASTA IS ALDENTE.
