Ingredients For lime cilantro black bean soup

2 canblack beans, drained (15.5 oz ea.)

2 cchicken stock (or broth), low sodium, low fat

1 csalsa, medium (or your preference)

2 tspcumin, powdered

1/4 conion, chopped

1/4 clime juice

1 tspolive oil
-
1/4 cfresh cilantro, chopped (plus more for garnish, if desired)

light sour cream, for garnish (if desired)
How To Make lime cilantro black bean soup

1Saute the onions in the oil.

2Put everything else except for one can of black beans into a blender or food processor, and puree.

3Pour mixture into the pot with the sauteed onions.

4Add the remaining, whole black beans, and heat through. Serve with cilantro and sour cream for garnish (if desired).

5Note: this is also good with crumbled tortilla chips sprinkled on top. Maybe some shredded cheese of your choice.
